Chocolatey Brownies

fudgey and chewy!

Ingredients:

1/2 cup butter or margarine, softened
1 cup sugar
1 (16 ounce) can Hersheys Chocolate Syrup
4 eggs
1 1/4 cups flour
1 cup semi-sweet chocolate chips
nuts (optional)

Preparation:

1.Preheat oven to 350°. Grease pan, 13x9x2-inch or 9x9x2-inch (depending on whether you want thin or thick brownies).
2.Beat butter and sugar in large bowl.
3.Add syrup, eggs, and flour, beat well.
4.Stir in chocolate chips and nuts if using and pour batter into prepared pan.
5.Bake 30-35 minutes or until brownies begin to pull away from sides of pan.
6.Cool completely and cut into bars.

Boiled Chocolate Cake

Serve this warm. Almost like pudding. Try this.

Ingredients:

2 cups granulated sugar
2 cups water
4 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 cup butter
4 large eggs
3 cups self-rising flour

Preparation:

1.Preheat oven to 350ºF degrees (180 C).
2.Grease and line a 9 x 13-inch rectangular cake pan.
3.Place all ingredients except eggs and flour into a large saucepan, bring to boil while stirring gently, then simmer 2-3 minutes.
4.Let it cool.
5.Beat the eggs lightly, then add to cooled chocolate mixture.
6.Sift in the flour slowly, stirring thoroughly as you add to avoid lumps.
7.Pour batter into prepared pan and bake in preheated oven for 55-60 minutes or until a cake tester inserted into cake comes out clean.
8.Cool cake on rack for 15 minutes, then invert cake onto rack to cool completely.
9.Dust with confectioners' sugar or if preferred cocoa powder.
10.If desired, frost or glaze cake when completely cooled.

Hot Cocoa Mix

Rainy days are here. Why not try this hot cocoa mix. Enjoy! =)

Ingredients:

2 cups nonfat dry milk powder
2 cups confectioners' sugar
1 1/2 cups Dutch-processed cocoa powder
1 1/2 cups white chocolate chips
1/4 teaspoon salt

Preparation:

1.Combine ingredients in large bowl.
2.Working in two batches, pulse ingredients in food processor until chocolate is finely ground.
3.Store in airtight container for up to 3 months.
4.Too make hot cocoa, stir 1/3 cup of the mix into 1 cup of hot (not boiling) milk.
5.Top with whipped cream or mini marshmallows and a little chocolate powder. I sometimes use cinnamon or nutmeg powder, instead. A little brandy and a crackling fire make for a real treat!

Chocolate Cake - Dairy Free

Ingredients:

2/3 cup vegan margarine
1 2/3 cups sugar
3 eggs
1/2 teaspoon vanilla
2 cups flour
2/3 cup cocoa powder
1 1/4 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 1/3 cups water


Preparation:

1.Place first 4 ingredients in mixing bowl and beat for 3 minutes on high.
2.Combine dry ingredients and add alternately with water to creamed mixture.
3.Pour into 2 greased and cocoa powdered 9-inch round baking pans.
4.Bake for 30- 35 minutes at 350°F.
5.Let cakes cook for 10 minutes, invert onto wire racks to cook completely.
6.Frost, glaze or dust with confectioners' sugar.

Orange Iced Mocha

Tried to spend $4 for just a coffee drink? I tried it, and it's expensive. I came up with this easy recipe that works well for me. Hope you'll like this.

Ingredients:

1 1/2 tablespoons instant coffee
3 tablespoons boiling water
6 tablespoons french french vanilla liquid coffee creamer (I use Coffee Mate)
1/2 cup chocolate milk (I use Nesquick fortified extra calcium)
1 cup milk (non-fat will help thin choc. milk)
6-8 drops orange extract (or to taste)
ice cubes
canned extra creamy whipped cream

Preparation:

1.In a 20 oz glass or bottle, mix coffee and water until coffee is dissolved.
2.Add creamer, chocolate milk, milk and extract.
3.Stir.
4.Add just enough ice cubes to leave enough room at top for whipped cream.
5.Top with whipped cream.

Eggless Chocolate cake

Found this recipe from my mother's cook book. All you need are the very basic ingredients. hope all vegetarians will love this.

Ingredients:

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 cup powdered sugar
1/4 cup cocoa powder
1 teaspoon lime juice
1 teaspoon vanilla essence
1 cup water (warm)
3/4 cup oil
1 pinch salt

PREPARATION:

1.Preheat the oven to 350°F.
2.Mix the dry ingredients together in a large bowl.
3.Make a little space in the center and por in oil,lemon juice,warm water & vanilla essence.
4.Mix well in one direction until you get a nice smooth batter.
5.Pour the batter into a greased,lined baking tray.
6.Bake for 30-35 minutes or until a toothpick comes out clean.

The Ultimate Chocolate Brownie Muffin!

These are moist and rich, no need for an electric mixer for this recipe it's all mixed with a wooden spoon, I have even added in chopped walnuts or mini chocolate chips.

Ingredients:

3/4cup good quality baking cocoa
1teaspoonbaking powder (heaping)
3/4cup butter or margarine, melted
1/2cup boiling water
1tablespoon vanilla
1 1/4cups sugar (or to taste)
2eggs
1 1/3cups all-purpose flour
1/4teaspoon salt
1/2cup mini chocolate chips (optional)
1/2cup walnuts (optional)

Preparation:

Set oven to 350°F.
1.Line 12 muffin tins with paper liners.
2.In a medium bowl combine cocoa and baking powder; mix to combine.
3.Add in boiling water; mix well with a wooden spoon to combine.
4.Add in the melted butter and vanilla; mix well.
5.Add in the sugar, mix well with a wooden spoon.
6.Stir in eggs with a wooden spoon; mix until combined.
7.Mix the flour with salt; add in the the chocolate mixture; mix well to combine (batter will be a bit on the thin side).
8.Add/mix in mini chocolate chips or walnuts (or 1 cup of both!).
9.Using an ice cream scoop fill each of the muffin tins almost to the top.
10.Bake for 25-30 minutes or until muffins are done, don't over bake! (might take a little longer, depending on how full the muffin tins are with the batter).
11.Cool, drizzle glaze over or frost with buttercream frosting.

Chocolate cake with icing

Hmmm.. This is my son's favorite, not only him but my whole family. lol
Hope you'll like this too.

Ingredients:

{cake}
2/3 cup shortening
1 3/4 cups sugar
3 eggs
1/2 cup cocoa
1/2 cup water
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
3/4 cup buttermilk

{icing}
2 cups sugar
1/2 cup cocoa
1/2 cup milk
1/2 cup (1 stick) margarine or butter
1 teaspoon pure vanilla extract

Procedure:

{cake}
1.Cream the shortening and the sugar together.
2.Beat in the eggs.
3.Blend and add the cocoa and water.
4.Sift together the flour, baking soda and salt.
5.Add alternately to the egg mixture with the buttermilk.
6.Grease and sprinkle cocoa in two 9 inch cake pans.
7.Pour batter into pans and bake at 350F. degrees for 35 minutes.
8.Remove to cool on a rack before icing.

{icing}
Mix ingredients and bring to a boil for one minute over medium high heat. Beat with wood spoon or mixer until the mixture begins to thicken. Spread on warm cake.

Why chocolate?!


Chocolate - A food or flavoring made from the seeds of the cacao or chocolate tree. Chocolate is rich in flavinoids, compounds that act as antioxidants. Flavinoids may also lower blood pressure and improve blood flow, by regulating the synthesis of nitric oxide, which dilates blood vessels. Flavinoids, like aspirin, help keep platelets from aggregating on vessel walls. Thus, chocolate may have health benefits, provided it is consumed in moderation.

This month is my birthday. So what? Well, I love chocolates and I want to share my chocolate recipes this month.

Chocolate Fudge Brownies

Chocolate brownies with butter and walnuts.

Ingredients:

1 cup butter or margarine, softened
2 cups sugar
3 eggs
1 teaspoon vanilla extract
4 squares unsweetened chocolate
1 cup sifted all-purpose flour
1/2 teaspoon salt
1 cup chopped walnuts

Preparation:

1.Cream 1/2 cup butter with sugar.
2.Add eggs; beat until light and fluffy.
3.Add vanilla.
4.Melt remaining 1/2 cup butter with chocolate; cool and beat into creamed mixture. 5.Stir in flour, salt, and nuts; blend well.
6.Pour batter into greased and floured 13 x 9-inch pan. Bake at 350° for 45 minutes. 7.Cool in pan.

Chocolate Chip Cookies

Oven: 375 oF
Yield: 3 dozen cookies

Ingredients

1/2 cup margarine
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla
1 cup sifted all purpose flour
1/2 tsp baking soda
1 cup chocolate chips
1/2 cup nuts (walnuts, almonds or cashew)

Procedure

1. In a mixing bowl cream together margarine, sugar and brown sugar.
2. Add egg and vanilla and cream together.
3. Add flour and baking soda and mix till well blended.
4. Add chocolate chips and nuts and continue mixing until well distributed.
5. Drop from a spoon about 2 inches apart on a greased cookie sheet.
6. Bake for 10 to 12 minutes or until edges begin to brown.
